Dauphiné Ravioli Recipe
Ingredients:
- 2 cups flour
- 1 tsp salt
- 3 eggs
- 1/4 cup water
- 1 lb ground beef
- 1 onion, chopped
- 1 garlic clove, minced
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 2 tbsp unsalted butter, melted
- 1/2 cup heavy cream
Instructions:
- In a food processor, combine flour and salt and pulse to mix well.

- Slowly add water as needed and pulse until the dough comes together in a ball.
- Divide the dough into two equal parts.
- Cover the dough with a towel and let it rest for 30-60 minutes.
- In a pan, cook the ground beef, onion, and garlic over medium heat until the beef is no longer pink.
- Add Parmesan cheese, parsley, and melted butter to the beef mixture and stir to combine.
- In a separate pan, heat the heavy cream over low heat until it starts to simmer.
- Remove from heat and set aside.
- Roll out one part of the dough to a thin layer.
- Cut 3-4 inch circles from the dough using a cookie cutter or cup.
- Place a small spoonful of the beef mixture in the center of each circle.
- Brush a little water around the edges of the circle.
- Cover with another circle of dough and press the edges together with a fork.
- Repeat until all the dough and beef mixture have been used.
- In a large pot, boil salted water and add the ravioli.
- Simmer for 5-7 minutes, or until the ravioli are cooked.
- Drain the ravioli and add them to the pan with the heavy cream.
- Stir the ravioli until they are coated in the cream sauce.
