Dauphiné Ravioli Recipe

Ingredients:

  • 2 cups flour
  • 1 tsp salt
  • 3 eggs
  • 1/4 cup water
  • 1 lb ground beef
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 tbsp unsalted butter, melted
  • 1/2 cup heavy cream

Instructions:

  1. In a food processor, combine flour and salt and pulse to mix well.
  2. Add eggs and pulse until mixture resembles coarse crumbs.
  3. Slowly add water as needed and pulse until the dough comes together in a ball.
  4. Divide the dough into two equal parts.
  5. Cover the dough with a towel and let it rest for 30-60 minutes.
  6. In a pan, cook the ground beef, onion, and garlic over medium heat until the beef is no longer pink.
  7. Add Parmesan cheese, parsley, and melted butter to the beef mixture and stir to combine.
  8. In a separate pan, heat the heavy cream over low heat until it starts to simmer.
  9. Remove from heat and set aside.
  10. Roll out one part of the dough to a thin layer.
  11. Cut 3-4 inch circles from the dough using a cookie cutter or cup.
  12. Place a small spoonful of the beef mixture in the center of each circle.
  13. Brush a little water around the edges of the circle.
  14. Cover with another circle of dough and press the edges together with a fork.
  15. Repeat until all the dough and beef mixture have been used.
  16. In a large pot, boil salted water and add the ravioli.
  17. Simmer for 5-7 minutes, or until the ravioli are cooked.
  18. Drain the ravioli and add them to the pan with the heavy cream.
  19. Stir the ravioli until they are coated in the cream sauce.
  20. Serve and enjoy!
