Ingredients

  • 1 cup of pitted dates
  • ½ cup of rolled oats
  • ½ cup of almond flour
  • 2 tablespoons of honey
  • 1 teaspoon of vanilla extract
  • 1 pinch of salt
  • 1 tablespoon of unsweetened cocoa powder
  • 1 tablespoon of water (optional)
  • Shredded coconut or chopped nuts for coating (optional)

Directions

  1. Add the pitted dates, rolled oats, almond flour, honey, vanilla, salt, and cocoa powder to a food processor.
  2. Pulse the mixture until it’s well combined and starts to form a crumbly dough.
  3. If the mixture is too dry, add a tablespoon of water and pulse again until it’s smooth.
  4. Using clean hands, roll the mixture into small balls, about the size of a cherry tomato.
  5. If desired, coat the balls in shredded coconut or chopped nuts.
  6. Place the disguised dates in an airtight container and chill in the fridge for at least an hour.
