Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 fennel bulb, thinly sliced

  • 2 cups vegetable broth
  • 1 pinch saffron threads (optional)
  • 1 teaspoon dried thyme
  • 1 pound white fish, cut into bite-sized pieces (such as cod or halibut)
