Eggplant Caviar in the Oven Recipe
Ingredients:
- 2 large eggplants, cut into small cubes
- 2 garlic cloves, minced
- 1 onion, chopped
- 3 tablespoons of olive oil
- 1 tablespoon of tomato paste
- 1/2 teaspoon of paprika
- Salt and pepper to taste
Instructions:
- Preheat the oven to 375°F/190°C.
- Spread the eggplant cubes on a baking sheet and drizzle with one tablespoon of olive oil. Mix well to coat the eggplant. Bake in the oven for about 20-25 minutes, or until the eggplant is tender and golden brown.
- In the meantime, heat two tablespoons of olive oil in a skillet over medium heat. Add the onions and garlic and sauté for about 3-4 minutes or until the onions are translucent. Add the tomato paste, paprika, salt, and pepper and cook for another 2 minutes.
- Remove the eggplant from the oven and let it cool for a few minutes. Then, transfer the eggplant to a bowl, add the onion mixture, and mash everything together with a fork or potato masher until it’s smooth and creamy.
- Adjust the seasoning of your eggplant caviar to taste and serve.
