Eggplant Caviar Recipe

Ingredients:

  • 1 large eggplant
  • 1/2 onion, chopped
  • 1 clove garlic, minced
  • 1/4 cup olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
