Farmer’s Soup
This hearty and nutritious soup is packed with fresh vegetables and tender chunks of chicken. It’s the perfect dish to warm you up on a chilly day!
Ingredients:
- 1 lb. boneless, skinless chicken breasts, cut into bite-sized pieces
- 4 cups chicken broth
- 2 cups water
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 cup diced potatoes
- 1 can (14 oz.) diced tomatoes, undrained
- 1 tsp. dried thyme
- 1 bay leaf
- Salt and pepper, to taste
- 1 cup frozen peas
- 1/4 cup chopped fresh parsley
Instructions:
- In a large soup pot, cook the chicken in a little bit of oil until browned on all sides. Remove from the pot and set aside.
- Add the chicken broth and water to the pot and bring to a boil.
- Add the carrots, celery, onion, and garlic to the pot and reduce the heat to medium. Simmer for 10 minutes.
- Add the potatoes, diced tomatoes, thyme, bay leaf, salt, and pepper to the pot. Simmer for another 15-20 minutes, or until the vegetables are tender.
- Add the cooked chicken, frozen peas, and parsley to the pot. Simmer for another 5-10 minutes, or until the peas are tender and the chicken is cooked through.
- Discard the bay leaf before serving.
