Farmer’s Soup

This hearty and nutritious soup is packed with fresh vegetables and tender chunks of chicken. It’s the perfect dish to warm you up on a chilly day!

Ingredients:

  • 1 lb. boneless, skinless chicken breasts, cut into bite-sized pieces
  • 4 cups chicken broth
  • 2 cups water
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 cup diced potatoes
  • 1 can (14 oz.) diced tomatoes, undrained
  • 1 tsp. dried thyme
  • 1 bay leaf
  • Salt and pepper, to taste
  • 1 cup frozen peas
  • 1/4 cup chopped fresh parsley

Instructions:

  1. In a large soup pot, cook the chicken in a little bit of oil until browned on all sides. Remove from the pot and set aside.
  2. Add the chicken broth and water to the pot and bring to a boil.
  3. Add the carrots, celery, onion, and garlic to the pot and reduce the heat to medium. Simmer for 10 minutes.
  4. Add the potatoes, diced tomatoes, thyme, bay leaf, salt, and pepper to the pot. Simmer for another 15-20 minutes, or until the vegetables are tender.
  5. Add the cooked chicken, frozen peas, and parsley to the pot. Simmer for another 5-10 minutes, or until the peas are tender and the chicken is cooked through.
  6. Discard the bay leaf before serving.
