Fig and Almond Cake Recipe

Ingredients:

  • 200g unsalted butter, softened
  • 200g caster sugar
  • <4 eggs

  • 200g self-raising flour
  • 1 tsp baking powder
  • 100g ground almonds
  • 100ml milk
  • 8-10 ripe figs, quartered
  • 2 tbsp honey
  • Handful of flaked almonds

Instructions:

  1. Preheat the oven to 180C/350F/Gas Mark 4. Grease a 20cm cake tin and line the base with baking parchment.
  2. Cream the butter and sugar together until light and fluffy. Add the eggs, one at a time, and beat well.
  3. Sift in the flour and baking powder, and fold in the ground almonds. Gradually add the milk, stirring until you get a smooth batter.
  4. Pour the batter into the prepared tin and level the surface. Arrange the quartered figs on top, gently pressing them in. Drizzle the honey over the figs and scatter with flaked almonds.
  5. Bake for 50-60 minutes or until a skewer inserted into the centre of the cake comes out clean. Leave to cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely.

Serving Suggestions:
