Filet mignon in a crust Recipe
Ingredients:
- 4 filet mignons (6-8 ounces each)
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup dijon mustard
- 1 tablespoon minced garlic
- 1 tablespoon chopped fresh thyme
- 1 sheet puff pastry, thawed and rolled out to 1/8 inch thickness
- 1 egg, beaten
Directions:
- Preheat the oven to 425°F.
- Season the filets with salt and black pepper, then rub with olive oil and set aside.
- In a small bowl, mix the dijon mustard, minced garlic, and fresh thyme together.
- Place the puff pastry on a lightly floured surface and cut it into four equal squares.
- Spread a thin layer of the dijon mustard mixture on top of each filet mignon.
- Place each filet mignon, mustard-side down, onto the center of each square of puff pastry.
- Wrap the filets tightly in the puff pastry, pinching the seams to seal them completely. Trim any excess pastry.
- Brush the outside of the puff pastry with the beaten egg.
- Place the wrapped filets onto a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, or until the pastry is golden brown and the internal temperature of the filet mignon reaches 120-125°F for medium rare.
- Let the filet mignons rest for 5-10 minutes before serving.
