Filet mignon in a crust Recipe

Ingredients:

  • 4 filet mignons (6-8 ounces each)
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup dijon mustard
  • 1 tablespoon minced garlic
  • 1 tablespoon chopped fresh thyme
  • 1 sheet puff pastry, thawed and rolled out to 1/8 inch thickness
  • 1 egg, beaten

Directions:

  1. Preheat the oven to 425°F.
  2. Season the filets with salt and black pepper, then rub with olive oil and set aside.
  3. In a small bowl, mix the dijon mustard, minced garlic, and fresh thyme together.
  4. Place the puff pastry on a lightly floured surface and cut it into four equal squares.
  5. Spread a thin layer of the dijon mustard mixture on top of each filet mignon.
  6. Place each filet mignon, mustard-side down, onto the center of each square of puff pastry.
