Pasta and Lentils Recipe

Ingredients:

  • 1 lb pasta
  • 1 cup dried lentils
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp chili powder
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1/4 cup chopped fresh parsley
  • Salt and pepper, to taste

Instructions:

  1. Rinse and drain the lentils in a fine-mesh strainer.
  2. Cook the pasta according to package directions. Drain and set aside.
  3. In a large pot or Dutch oven, heat the olive oil over medium heat.

  5. Add the cumin, coriander, and chili powder. Cook for 1-2 minutes or until fragrant.
  6. Add the lentils, vegetable broth, and diced tomatoes. Bring to a boil, then reduce to a simmer and cook until the lentils are tender (about 20-25 minutes).
  7. Once the lentils are cooked, season with salt and pepper to taste.
  8. Add the cooked pasta to the lentil mixture and stir to combine.
  9. Garnish with chopped fresh parsley before serving.
