Fish Couscous Recipe
Ingredients:
- 1 lb couscous
- 2 lbs fish (halibut, cod or any firm fish), cut into 1-inch pieces
- 2 tbsp olive oil
- 1 large onion, chopped
- 4 garlic cloves, minced
- 1 can diced tomatoes
- 2 cups chicken broth
- 1 cup water
- 1 tsp ground cumin
- 1 tsp ground ginger
- 1 tsp paprika
- 1 tsp ground nutmeg
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro
Instructions:
- Place couscous in a large bowl and pour in enough boiling water to cover by 1/4 inch. Cover and let steam while preparing the fish.

- Add diced tomatoes, chicken broth, water, cumin, ginger, paprika, nutmeg, salt and pepper. Bring to a simmer and let cook for 10 minutes.
- Add fish to the pot and let cook for 5-7 minutes, until fish is cooked through.
- Fluff the couscous with a fork and divide among serving bowls.
- Ladle the fish stew on top of the couscous.
- Garnish with cilantro and serve hot.
