Fish Couscous Recipe

Ingredients:

  • 1 lb couscous
  • 2 lbs fish (halibut, cod or any firm fish), cut into 1-inch pieces
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 1 can diced tomatoes
  • 2 cups chicken broth
  • 1 cup water
  • 1 tsp ground cumin
  • 1 tsp ground ginger
  • 1 tsp paprika
  • 1 tsp ground nutmeg
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro

Instructions:

  1. Place couscous in a large bowl and pour in enough boiling water to cover by 1/4 inch. Cover and let steam while preparing the fish.
  2. In a large pot, heat olive oil over medium heat. Add onion and garlic and cook until onion is soft, about 5 minutes.
  3. Add diced tomatoes, chicken broth, water, cumin, ginger, paprika, nutmeg, salt and pepper. Bring to a simmer and let cook for 10 minutes.
  4. Add fish to the pot and let cook for 5-7 minutes, until fish is cooked through.
  5. Fluff the couscous with a fork and divide among serving bowls.
  6. Ladle the fish stew on top of the couscous.
  7. Garnish with cilantro and serve hot.
