Fish Waterzoi Recipe

Ingredients:

  • 4 fillets of a firm white fish (such as halibut or cod)
  • 4 cups of chicken broth
  • 1 cup heavy cream
  • 2 egg yolks
  • 1 onion (chopped)
  • 2 leeks (sliced)
  • 2 carrots (peeled and sliced)
  • 1 celery stick (sliced)
  • 2 cloves of garlic (minced)
  • 1 bay leaf
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste
  • 1 tablespoon of butter

Instructions:

  1. Heat the butter in a pot over medium heat. Add onions, leeks, carrots, celery, and garlic. Cook until soft.
  2. Add bay leaf, thyme, salt, and pepper. Cook for a minute.
  3. Add chicken broth and bring it to boil. Reduce heat and let it simmer for 10 minutes. Add fish fillets and let it cook for 5 minutes until fish is cooked through.
  4. Take the fish fillets out of the pot and set them aside on a plate.
  5. In a mixing bowl, whisk egg yolks and heavy cream. Slowly ladle some hot broth to the mixing bowl (a little at a time) and whisk until the mixture is slightly hot, but not boiling.
  6. Add the cream mixture to the pot and cook over low heat for 3-5 minutes until the soup thickens.
  7. Serve the fish on a plate and ladle the soup over the fish.
