Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 2 tablespoons poppy seeds
  • 2 tablespoons sesame seeds
  • 2 tablespoons flax seeds
  • 2 tablespoons sunflower seeds
  • 1 tablespoon black chia seeds

Instructions

  1. Preheat oven to 350°F and line an 8-inch square baking pan with parchment paper.
  2. In a large mixing bowl, using an electric mixer, beat butter and sugar for 2-3 minutes until creamy.
  3. Add flour to the bowl and mix on low speed until just combined.
  4. Add all the seeds to the bowl and mix until evenly distributed.
  5. Pour the mixture into the prepared baking pan, flatten out with a spatula, and prick the surface with a fork.
  6. Bake in the preheated oven for 25-30 minutes until golden brown around the edges.
  7. Allow the shortbread to cool completely in the pan, then remove and cut into squares or wedges.
