Foie Gras Truffles Recipe

Ingredients:

  • 8 oz. of foie gras
  • 1/4 cup of heavy cream
  • 1/4 cup of unsalted butter
  • 1/4 cup of cocoa powder
  • 1/2 tsp. of salt

Instructions:

  1. Remove the foie gras from the fridge and let it come to room temperature.
  2. Melt the butter on low heat in a saucepan.
  3. Stir in the cocoa powder and salt.
  4. Slowly add the heavy cream and whisk well.
  5. Add the foie gras and stir until it melts into the mixture, creating a smooth truffle.
  6. Pour the mixture into a bowl and let it cool until firm, ideally for a few hours to overnight.
  7. Form the mixture into small balls and place them on a plate lined with parchment paper.
  8. Refrigerate the truffles until solid, taking them out a few minutes before serving.
