Giraumon Acras Recipe
Ingredients:
- 1 small giraumon squash (about 2 cups grated)
- 1 small onion, finely chopped
- 1 garlic clove, minced
- 1 scotch bonnet pepper, seeded and minced
- 1 tsp. salt
- 1 tsp. baking powder
- 1 ½ cups flour
- Vegetable oil for frying
Directions:
- Peel the giraumon squash and remove the seeds
- Grate the squash using a box grater, finely or coarsely depending on your preference. Transfer the grated squash to a large mixing bowl.
- Add the minced onion, minced garlic, minced scotch bonnet pepper, salt, and baking powder to the mixing bowl with the grated squash. Mix everything together until well combined.
- Add the flour, ½ cup at a time, stirring until a thick batter forms.
- Heat enough vegetable oil to cover the bottom of a medium skillet over medium heat.
- Using a spoon, scoop out about 2 tablespoons of batter at a time and gently drop it into the hot oil. Fry the giraumon acras until golden brown on both sides, about 1-2 minutes per side.
- Remove the acras from the skillet and transfer them to a paper towel-lined plate to remove excess oil.
- Serve the giraumon acras hot with your favorite dipping sauce.
