Giraumon Acras Recipe

Ingredients:

  • 1 small giraumon squash (about 2 cups grated)
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 1 scotch bonnet pepper, seeded and minced
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1 ½ cups flour
  • Vegetable oil for frying

Directions:

  1. Peel the giraumon squash and remove the seeds
  2. Grate the squash using a box grater, finely or coarsely depending on your preference. Transfer the grated squash to a large mixing bowl.
  3. Add the minced onion, minced garlic, minced scotch bonnet pepper, salt, and baking powder to the mixing bowl with the grated squash. Mix everything together until well combined.
  4. Add the flour, ½ cup at a time, stirring until a thick batter forms.
  5. Heat enough vegetable oil to cover the bottom of a medium skillet over medium heat.
  6. Using a spoon, scoop out about 2 tablespoons of batter at a time and gently drop it into the hot oil. Fry the giraumon acras until golden brown on both sides, about 1-2 minutes per side.
  7. Remove the acras from the skillet and transfer them to a paper towel-lined plate to remove excess oil.
  8. Serve the giraumon acras hot with your favorite dipping sauce.
