Goat Cheese Tian Recipe
Ingredients:
- 1 eggplant, sliced into thin rounds
- 2 zucchinis, sliced into thin rounds
- 2 tablespoons of olive oil
- 1 garlic clove, minced
- 1/2 teaspoon of dried thyme
- 1/2 teaspoon of dried basil
- 1/4 teaspoon of salt

Instructions:
- Preheat the oven to 375°F.
- Place the eggplant and zucchini rounds separately in a bowl and toss them one at a time with 1 tablespoon of olive oil each, garlic, thyme, basil, salt, and black pepper.
- On a baking sheet lined with parchment paper, spread out the eggplant and zucchini slices in separate lines.
- Roast the vegetables in the oven until they are golden brown and slightly crispy, about 25 minutes.
- While the vegetables are roasting, crumble the goat cheese into a mixing bowl and mix it with the breadcrumbs and the remaining tablespoon of olive oil.
- Remove the vegetables from the oven and let them cool down for about 5 minutes. Then, place half of the eggplant rounds in the bottom of an 8-inch square glass baking dish. Add a layer of zucchini rounds on top.
- Spread the goat cheese mixture over the zucchini rounds, then repeat a second layer of eggplant and zucchini, and top with the remaining goat cheese mixture.
- Place the tian in the oven and bake for 20 minutes, or until the cheese has melted and the top is golden brown and crispy.
- Remove from the oven, serve and enjoy!
