Gougères with Comté Bernard Loiseau style

Ingredients:

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1/4 tsp salt
  • 1 cup flour
  • 4 large eggs
  • 1 cup shredded Comté cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tsp thyme leaves

Instructions:

  1. Preheat the oven to 400°F.
  2. In a medium-sized saucepan, bring water, butter, and salt to a boil.
  3. Add in the flour and stir until the mixture pulls away from the sides of the pot and forms a ball.
  4. Remove the pot from the heat and let cool for a couple of minutes.
  5. Using a mixer, add one egg at a time until fully incorporated.
  6. Stir in the shredded Comté cheese, Parmesan cheese, and thyme leaves.
  7. Using a tablespoon or a cookie scoop, drop balls of dough onto a parchment-lined baking sheet.
  8. Bake for 20-25 minutes or until golden brown.

Serving Suggestions:

Serve these Gougères as an appetizer or a snack. They are best eaten warm and can be paired with white wine or champagne for a delicious indulgence. These cheese puffs can also be served alongside a salad or soup as a delectable side dish.
