Green Tea Financiers
Ingredients
- 1/2 cup unsalted butter
- 1/2 cup almond flour
- 1 cup powdered sugar
- 1/2 cup all-purpose flour
- 1 tablespoon matcha green tea powder
- 4 egg whites
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat the oven to 375°F and grease a financier pan or mini muffin tin.
- Melt the butter in a small saucepan over medium heat until the milk solids turn brown and the butter smells nutty. Remove from heat and let cool.
- In a mixing bowl, whisk together the almond flour, powdered sugar, all-purpose flour, matcha powder, and salt until well combined.
- In a separate mixing bowl, beat the egg whites until they form stiff peaks.
- Add the cooled brown butter and vanilla extract to the flour mixture and mix until smooth.
- Gently fold the egg whites into the batter until just combined.
- Divide the batter evenly among the cups of the financier pan or mini muffin tin.
- Bake for 12-15 minutes until the financiers are golden and spring back when pressed lightly.
- Remove from the oven and let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
