Green Tea Financiers

Ingredients

  • 1/2 cup unsalted butter
  • 1/2 cup almond flour
  • 1 cup powdered sugar
  • 1/2 cup all-purpose flour
  • 1 tablespoon matcha green tea powder
  • 4 egg whites
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 375°F and grease a financier pan or mini muffin tin.
  2. Melt the butter in a small saucepan over medium heat until the milk solids turn brown and the butter smells nutty. Remove from heat and let cool.
  3. In a mixing bowl, whisk together the almond flour, powdered sugar, all-purpose flour, matcha powder, and salt until well combined.
  4. In a separate mixing bowl, beat the egg whites until they form stiff peaks.
  5. Add the cooled brown butter and vanilla extract to the flour mixture and mix until smooth.
  6. Gently fold the egg whites into the batter until just combined.
  7. Divide the batter evenly among the cups of the financier pan or mini muffin tin.
  8. Bake for 12-15 minutes until the financiers are golden and spring back when pressed lightly.
  9. Remove from the oven and let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
