Hedgehog Bread with Mozzarella and Sage Recipe
Ingredients:
- 450g bread flour
- 1 tsp salt
- 1 tsp sugar
- 1 sachet instant yeast (7g)
- 275ml warm water
- 8-10 fresh sage leaves, finely chopped
- 200g grated mozzarella cheese
- 1 egg, beaten
Instructions:
- Mix the flour, salt, sugar and yeast in a large bowl.
- Add the warm water and mix to form a dough.
- Knead the dough for 10 minutes until smooth and elastic.
- Cover the dough with a damp cloth and let it rise for 45 minutes.
- Preheat the oven to 200°C.
- Divide the dough into two equal parts.
- Roll each half into a long rectangle.
- Sprinkle half of the sage and half of the mozzarella cheese on each rectangle.
- Roll up each rectangle into a tight spiral and pinch the ends and seam together to seal.
- Place the spirals alongside each other in a greased loaf tin to form a hedgehog shape.
- Brush the beaten egg over the top of the dough.
- Bake in the oven for 30-35 minutes until golden brown.
