Homemade Prune Tart Recipe

Ingredients:

  • 1 1/2 cups pitted prunes
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, chilled and cubed
  • 1 egg yolk
  • 2 teaspoons lemon zest
  • 1/4 teaspoon salt
  • 1 egg white, lightly beaten

Instructions:

  1. Soak the prunes in hot water for 15 minutes, then drain and puree in a food processor until smooth.
  2. In a medium bowl, mix together the flour, sugar, lemon zest, and salt. Cut in the butter using a pastry cutter or two knives until the mixture resembles coarse sand.
  3. Add the egg yolk and mix until a dough forms. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  4. Preheat the oven to 375°F (190°C).
  5. On a lightly floured surface, roll out the dough into a 10-inch circle. Carefully transfer it to a 9-inch tart pan, trimming the edges to fit. Spread the prune puree over the dough.
  6. Using a sharp knife, cut the excess dough off the edges of the tart pan. Brush the beaten egg white over the edges of the crust.
  7. Bake the tart for 25-30 minutes or until the crust is golden brown. Let cool to room temperature before serving.
