Homemade Tepache Recipe
Tepache is a traditional Mexican fermented drink made from pineapple and spices. It has a refreshing, slightly sour taste and is perfect for a hot summer day. Here’s how you can make it at home.
Ingredients:
- 1 large pineapple, chopped
- 1 cup brown sugar
- 2 cinnamon sticks
- 2 cloves
- 1/2 cup piloncillo (Mexican brown sugar)
- 1/2 gallon water
- 1/2 cup uncooked rice
Directions:
- In a large pot, combine the chopped pineapple, brown sugar, cinnamon sticks, cloves, piloncillo, and water. Bring to a boil and then let simmer for 30 minutes.
- Add the uncooked rice to the pot and let it cool to room temperature (around 70°F).
- Once the mixture has cooled, strain it into a large glass jar or pitcher. Cover with a cheesecloth or towel and let sit for 2-3 days, stirring once a day.
- After 2-3 days, the tepache should start to ferment and develop a fizzy texture. Once it has reached your desired level of fizziness, strain it again and refrigerate until ready to serve.
Serving Suggestions:
Tepache can be served chilled, over ice, or as a mixer for cocktails. Some people like to add a pinch of salt or chili powder for extra flavor. Serve in a glass with a lime wedge for garnish.
