Involtini Speck and Ricotta Recipe

Ingredients:

  • 8 thin slices of speck
  • 250g ricotta cheese
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 8 toothpicks

Instructions:

  1. Preheat the oven to 180°C.
  2. In a medium bowl, mix together the ricotta, Parmesan, parsley, garlic, salt and pepper until well combined.
  3. Lay the speck slices on a clean work surface, and spoon about a tablespoon of the ricotta mixture onto each slice.
  4. Roll up the speck slices, securing them with toothpicks.
  5. Place the involtini on a baking sheet lined with parchment paper, and bake for 10-12 minutes, or until the speck is crispy and golden brown.
  6. Remove the toothpicks before serving.
