Italian Lentil Salad Recipe
Ingredients:
- 1 cup brown lentils
- 3 cups water
- 1 medium red onion, diced
- 2 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup chopped sun-dried tomatoes
- 1/4 cup chopped fresh parsley
- 2 tablespoons red wine vinegar
- 1/4 cup extra-virgin olive oil
- Salt and pepper to taste
Instructions:
- Rinse lentils and remove any debris.
- In a medium pot, bring lentils and water to a boil. Reduce heat and simmer for 20-25 minutes or until tender. Drain excess water and set aside to cool.
- In a large bowl, mix together cooked lentils, red onion, garlic, oregano, basil, and red pepper flakes (if using).
- Add sun-dried tomatoes, freshly chopped parsley, red wine vinegar, and extra-virgin olive oil to the lentil mixture. Stir to combine.
- Season with salt and pepper to taste. Toss salad until well coated with the dressing.
- Serve the salad immediately or refrigerate until ready to serve.
