Italian Lentil Salad Recipe

Ingredients:

  • 1 cup brown lentils
  • 3 cups water
  • 1 medium red onion, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup chopped sun-dried tomatoes
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons red wine vinegar
  • 1/4 cup extra-virgin olive oil
  • Salt and pepper to taste

Instructions:

  1. Rinse lentils and remove any debris.
  2. In a medium pot, bring lentils and water to a boil. Reduce heat and simmer for 20-25 minutes or until tender. Drain excess water and set aside to cool.
  3. In a large bowl, mix together cooked lentils, red onion, garlic, oregano, basil, and red pepper flakes (if using).
  4. Add sun-dried tomatoes, freshly chopped parsley, red wine vinegar, and extra-virgin olive oil to the lentil mixture. Stir to combine.
  5. Season with salt and pepper to taste. Toss salad until well coated with the dressing.
  6. Serve the salad immediately or refrigerate until ready to serve.
