Japanese pearls with mango

Japanese Pearls with Mango Recipe

Ingredients:

  • 1 cup sushi rice
  • 1 1/4 cups water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 mango, diced
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • 1/4 cup toasted sesame seeds
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon lime juice

Instructions:

  1. Rinse sushi rice in cold water until water runs clear. Let sit for 10 minutes, then drain.
  2. In a medium saucepan, combine the rinsed rice with 1 1/4 cups of water. Bring to a boil, then reduce heat to low and cover. Cook for 15-20 minutes, or until the water has been absorbed and the rice is tender.
  3. In a small saucepan, combine the rice vinegar, sugar, and salt. Cook over medium heat until the sugar has dissolved, then remove from heat.
  4. Once the rice is done, transfer it to a large mixing bowl. Add the vinegar mixture and stir until well combined. Allow the rice to cool.
  5. In a separate bowl, mix together the soy sauce, honey, and lime juice until combined.
  6. When the rice has cooled, add the mango, green onions, cilantro, and sesame seeds. Pour the soy sauce mixture over the top and toss until everything is well combined.
  7. Serve the Japanese pearls chilled.
