Labneh Recipe
Ingredients:
- 2 cups plain Greek yogurt
- 1/4 tsp salt
- 2 tbsp olive oil
- 1 tsp za’atar
- 1 tsp sumac
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh dill
- 4 garlic cloves, minced
Instructions:
- Place a cheesecloth or muslin cloth over a large bowl.
- In a separate bowl, mix yogurt and salt together. Pour the mixture over the cheesecloth/muslin cloth.
- Wrap the cheesecloth/muslin cloth around the yogurt mixture and gently squeeze out any excess liquid. Tie the cloth to create a bundle.
- Hang the bundle over a sink or bowl for 24-48 hours to allow the liquid to drain out. The longer it hangs, the firmer the cheese will be.
- Remove the cheese from the cloth and place it in a bowl.
- Add olive oil to the cheese and mix well.
- Divide the cheese into four portions. To each portion, add one of the following: za’atar, sumac, parsley and garlic, or mint and dill.
- Mix each portion well to combine the flavors.
- Refrigerate for at least 30 minutes before serving.
