Lamb Shank Casserole with Vegetables

Ingredients:

  • 4 lamb shanks
  • 2 tablespoons olive oil
  • 1 onion
  • 2 cloves garlic
  • 2 carrots
  • 2 stalks of celery
  • 2 cups beef stock
  • 1 cup red wine
  • 2 sprigs fresh thyme
  • 2 bay leaves

  8. Cover with a lid or foil and bake for 3 hours or until the lamb is tender and falling off the bone.
  9. Remove from the oven and let it rest for 15 minutes.
  10. Serve hot with mashed potatoes or over rice.
