Lebanese Minced Meat Soup (Chorbet Rouz) Recipe

Ingredients:

  • 1/2 pound ground beef or lamb
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup white rice
  • 6 cups water
  • 3 tablespoons tomato paste
  • 1 tablespoon dried mint
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cinnamon
  • Juice of 1 lemon

Instructions:

  1. In a large pot, brown the ground meat over medium heat for about 5 minutes.
  2. Add the onion and garlic, and cook until the onion is translucent, about 5-7 minutes.
  3. Add the rice, water, tomato paste, dried mint, salt, pepper, and cinnamon.
  4. Bring to a boil, then reduce the heat to low and let simmer for about 30-40 minutes, or until the rice is cooked and the soup has thickened.
  5. Stir in lemon juice and serve hot.
