Leek Crumble Recipe

Ingredients

  • 350g leeks (trimmed and sliced)
  • 2 cloves garlic (minced)
  • 1 onion (chopped)
  • 50g butter
  • 1 tsp dried thyme
  • 100g breadcrumbs
  • 75g parmesan cheese (grated)
  • 50g plain flour
  • 75g cold butter (cut into small cubes)

Instructions

  1. Preheat the oven to 190°C (375°F) or Gas Mark 5.
  2. Melt the 50g of butter in a frying pan on a medium heat. Add the sliced leeks, minced garlic, chopped onion, and thyme. Cook for 10 minutes until the vegetables are soft.
  3. Transfer the vegetables to a baking dish.
  4. In a separate bowl, mix the breadcrumbs, parmesan cheese, plain flour and the 75g of cold butter cubes. Use your fingertips to rub the butter into the crumbs. The mixture should resemble coarse breadcrumbs.
  5. Scatter the crumb mixture over the leeks in the baking dish.
  6. Bake in the oven for 25 minutes until golden brown on top. Serve hot.
