Lemon Meringue Recipe
Ingredients
- 1 pre-baked 9-inch pie crust
- 1 cup granulated sugar
- ¼ cup cornstarch
- ¼ teaspoon salt
- 1 ½ cups water
- ½ cup lemon juice
- 2 tablespoons butter
- 4 egg yolks, beaten
- 4 egg whites
- ¼ teaspoon cream of tartar

Instructions
- Preheat oven to 350°F.

- In a separate bowl, beat egg whites and cream of tartar until soft peaks form. Add vanilla extract and gradually add 1/4 cup sugar while continuing to beat until stiff peaks form.
- Spread the meringue over the pie, carefully sealing the edges.
- Bake for 10 to 12 minutes or until light brown.
- Cool on a wire rack and then refrigerate for at least 3 hours before serving.
