Lemon Meringue Recipe

Ingredients

  • 1 pre-baked 9-inch pie crust
  • 1 cup granulated sugar
  • ¼ cup cornstarch
  • ¼ teaspoon salt
  • 1 ½ cups water
  • ½ cup lemon juice
  • 2 tablespoons butter
  • 4 egg yolks, beaten
  • 4 egg whites
  • ¼ teaspoon cream of tartar
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F.
  2. In a medium saucepan, whisk together 1 cup of sugar, cornstarch, and salt until well combined.
  3. Gradually whisk in water and lemon juice until smooth.
  4. Stir in butter and cook over medium heat, whisking constantly until mixture comes to a boil. Reduce heat and cook for 2 minutes, stirring constantly.
  5. Remove from heat and gradually whisk half of the hot mixture into the beaten egg yolks. Whisk this mixture back into the saucepan and cook on low heat for 2 minutes, stirring constantly.
  6. Pour filling into pre-baked pie crust.
  7. In a separate bowl, beat egg whites and cream of tartar until soft peaks form. Add vanilla extract and gradually add 1/4 cup sugar while continuing to beat until stiff peaks form.
  8. Spread the meringue over the pie, carefully sealing the edges.
  9. Bake for 10 to 12 minutes or until light brown.
  10. Cool on a wire rack and then refrigerate for at least 3 hours before serving.
