Light Cake with Tuna and Herbs Recipe

Ingredients:

  • 1 can of tuna, drained and flaked
  • 1/2 cup of all-purpose flour
  • 1/2 teaspoon of baking powder
  • 3 eggs
  • 1/4 cup of milk
  • 1 tablespoon of chopped fresh parsley
  • 1 tablespoon of chopped fresh chives
  • 1/4 teaspoon of salt
  • 1/8 teaspoon of black pepper
  • 1 tablespoon of olive oil

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9-inch (23cm) cake pan with olive oil.
  3. In a mixing bowl, combine the flour, baking powder, salt and black pepper.
  4. In a separate mixing bowl, whisk the eggs until fluffy.
  5. Add the milk, parsley, chives and tuna into the eggs and mix well.
  6. Add the flour mixture into the egg mixture and stir until well combined.
  7. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  8. Bake for 20-25 minutes, or until a toothpick comes out clean when inserted into the center of the cake.
  9. Take the cake out of the oven and let it cool in the pan for 10 minutes, then remove it from the pan and let it cool completely on a wire rack before serving.
