Light Cake with Tuna and Herbs Recipe
Ingredients:
- 1 can of tuna, drained and flaked
- 1/2 cup of all-purpose flour
- 1/2 teaspoon of baking powder
- 3 eggs
- 1/4 cup of milk
- 1 tablespoon of chopped fresh parsley
- 1 tablespoon of chopped fresh chives
- 1/4 teaspoon of salt
- 1/8 teaspoon of black pepper
- 1 tablespoon of olive oil
Instructions:
- Preheat the oven to 350°F (175°C).
- Grease a 9-inch (23cm) cake pan with olive oil.
- In a mixing bowl, combine the flour, baking powder, salt and black pepper.
- In a separate mixing bowl, whisk the eggs until fluffy.
- Add the milk, parsley, chives and tuna into the eggs and mix well.
- Add the flour mixture into the egg mixture and stir until well combined.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake for 20-25 minutes, or until a toothpick comes out clean when inserted into the center of the cake.
- Take the cake out of the oven and let it cool in the pan for 10 minutes, then remove it from the pan and let it cool completely on a wire rack before serving.
