Ingredients:

  • 1 cucumber
  • 1 carrot
  • 1 small red onion
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 1/4 cup chopped fresh mint leaves
  • 1/4 cup chopped fresh cilantro leaves
  • 1/4 cup lime juice
  • 1 tablespoon honey
  • Salt and black pepper to taste

Instructions:

  1. Wash and dry all the vegetables.
  2. Cut the cucumber and carrots into thin slices using a mandoline or a knife.
  3. Thinly slice the red onion.
  4. Seed and thinly slice the bell peppers.
  5. In a large bowl, combine the sliced vegetables, chopped mint, and cilantro.
  6. In a small bowl, whisk together lime juice, honey, salt and pepper.
  7. Pour lime juice mixture over the vegetable mixture and gently toss to combine.
  8. Refrigerate for at least 10 minutes before serving.
