Mama’s Regal Recipe

Ingredients:

  • 1 tbsp olive oil
  • 4 chicken thighs, bone-in and skin-on
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1/2 cup white wine
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions:

  1. In a large skillet, heat olive oil over medium-high heat. Add chicken thighs and sear on both sides until browned, about 5 minutes per side. Remove chicken from skillet and set aside.
  2. Add chopped onion to the skillet and sauté for 3-4 minutes until softened. Add minced garlic and cook for an additional minute.
  3. Pour in white wine and chicken broth and scrape the bottom of the pan to loosen any browned bits. Bring to a simmer.
  4. Return chicken thighs to the skillet and add dried thyme, salt, and black pepper. Cover and simmer for 20-25 minutes, until chicken is cooked through.
  5. Remove chicken from the skillet and set aside. Whisk in heavy cream to the skillet and bring to a boil. Reduce heat and simmer for 2-3 minutes, until sauce has thickened slightly.
  6. Plate chicken and pour sauce over the top. Serve immediately.
