Mango Flan
Ingredients:
- 1 cup sugar
- 1/4 cup water
- 3 cups ripe mango, peeled and cubed
- 1 can (14 oz.) sweetened condensed milk
- 1 can (12 oz.) evaporated milk
- 5 large eggs
- 1 tsp. vanilla extract
- 1/4 tsp. salt
Instructions:
- Preheat oven to 350°F (180°C).
- In a medium saucepan, combine sugar and water. Cook over medium-high heat, stirring occasionally, until sugar dissolves and turns golden brown, about 8-10 minutes. Quickly pour caramelized sugar into a 9-inch round baking dish, swirling to coat bottom and sides. Set aside to cool.
- In a blender, combine mango, sweetened condensed milk, evaporated milk, eggs, vanilla extract, and salt. Blend until smooth and pour mixture over caramelized sugar in baking dish.
- Place baking dish in a larger roasting pan and fill roasting pan with enough hot water to come halfway up the sides of the baking dish.
- Bake for 50-60 minutes or until a toothpick inserted in center comes out clean.
- Remove baking dish from roasting pan and let cool to room temperature. Cover and refrigerate for at least 2 hours or overnight.
- To serve, carefully run a knife around edges of flan to loosen. Invert onto a large serving platter and serve chilled.
