Manon’s Peach Pie Recipe
Ingredients:
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 1/3 cup unsalted butter, chilled and diced
- 3-4 tablespoons ice water
- 5-6 large ripe peaches, peeled and sliced
- 1/4 cup granulated sugar
- 2 tablespoons cornstarch
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon unsalted butter, diced
Directions:
- In a medium bowl, mix together flour and salt. Add diced butter and use a pastry blender or your hands to cut in the butter until the mixture resembles coarse crumbs.
- Add ice water one tablespoon at a time, mixing with a fork until the dough comes together and forms a ball.
- Flatten the dough into a disc and wrap it in plastic wrap. Chill in the refrigerator for at least 30 minutes.
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix together sliced peaches, sugar, cornstarch, cinnamon, and nutmeg.
- Roll out the chilled dough on a lightly floured surface to fit a 9-inch (23cm) pie dish.
- Place the rolled out dough into a 9-inch (23cm) pie dish and trim any excess dough from the edges.
- Pour the peach filling into the pie dish and dot the top with diced butter.
- Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
- Let cool for at least 15 minutes before serving.
