Marinated Fennel Recipe

Ingredients:

  • 2 fennel bulbs, trimmed and sliced
  • 2 garlic cloves, minced
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon honey
  • Salt and pepper, to taste

Instructions:

  1. In a small bowl, whisk together garlic, olive oil, red wine vinegar, honey, salt and pepper.
  2. Place the sliced fennel in a shallow dish and pour the prepared marinade over the top, mixing well.
  3. Cover and refrigerate for at least 1 hour, or overnight if possible.
  4. When ready to serve, use a slotted spoon to transfer the fennel to a plate, discarding any excess marinade.
