Marzipan Cake Recipe

Ingredients:

  • 1 cup butter, softened
  • 1 cup sugar
  • 4 eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 8 oz marzipan
  • 1/4 cup sliced almonds

Instructions:

  1. Preheat the oven to 350°F. Grease and flour a 9-inch cake pan.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, sift together the flour, baking powder, and salt. Add the dry ingredients to the creamed mixture, alternating with the milk and mixing well after each addition.
  5. On a lightly floured surface, knead the marzipan until it is soft and pliable. Roll it into a log shape and set it aside.
  6. Pour half of the cake batter into the prepared pan. Place the marzipan log on top of the batter, pressing it gently into the batter.
  7. Pour the remaining cake batter over the marzipan and smooth the top with a spatula. Sprinkle the sliced almonds on top.
  8. Bake for 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  9. Remove the cake from the oven and let it cool in the pan for 5-10 minutes before transferring it to a wire rack to cool completely.
  10. Serve the marzipan cake as is or with whipped cream or a side of fruit.
