Microwave Beetroot Crisps
Ingredients:
- 2 medium-sized beetroots
- 2 tbsp olive oil
- 1/2 tsp sea salt
- 1/2 tsp black pepper
Instructions:
- Wash and peel the beetroots. Using a mandolin slicer, slice them as thinly as possible. If you don’t have a mandolin slicer, you can use a sharp knife, but make sure the slices are as thin and uniform as possible.
- Place the beetroot slices in a large bowl and add the olive oil, sea salt, and black pepper. Toss well to coat.
- Line a large microwave-safe plate with a sheet of parchment paper. Arrange the beetroot slices in a single layer on the paper, making sure they don’t overlap.
- Microwave on high for 3-4 minutes or until the beetroot slices are dry and crisp. Keep an eye on them as they cook, as the cooking time may vary depending on your microwave.
- Remove the plate from the microwave and let the beetroot crisps cool for a couple of minutes before serving.
Verdict:
Microwaved beetroot crisps are a healthy and delicious snack that can be made in minutes. They are crunchy, salty, and slightly sweet. The olive oil gives them a nice flavor and helps them crisp up in the microwave. They are a great alternative to store-bought potato chips and are perfect for parties, movie nights, and snacking on the go.
Serving suggestions:
Serve the beetroot crisps as a snack on their own or pair them with your favorite dip, such as hummus, guacamole, or tzatziki. You can also use them as a garnish for salads, soups, and sandwiches. Enjoy!
