Mimosa Egg Recipe

Ingredients:

  • 6 eggs
  • 1/2 cup mayonnaise
  • 2 teaspoons Dijon mustard
  • 2 tablespoons chopped fresh chives
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • Additional chopped chives, for garnish

Instructions:

  1. Boil eggs in a pot of boiling water for 10 minutes until fully cooked. Remove from boiling water and place in a bowl of ice water until cooled.
  2. Peel the eggs and cut them in half lengthwise.
  3. Scoop out the yolks and place them in a separate bowl.
  4. Using a fork, mash the egg yolks and add mayonnaise, Dijon mustard, chopped chives, salt, black pepper, paprika and mix well until smooth.
  5. Spoon the yolk mixture into each egg half or pipe the mixture with a pastry bag.
  6. Garnish with additional chopped chives and refrigerate for at least 30 minutes before serving.
