Mini Blinis with Yoghurt Recipe
Ingredients
- 1 cup all-purpose flour
- 1 cup plain Greek yoghurt
- 2 large eggs, separated
- 2 tsp. baking powder
- 1/4 tsp. salt
- 2 tbsp. butter, melted and cooled
- Vegetable oil for cooking
Instructions
- In a large bowl, whisk together the flour, baking powder and salt.
- In a separate bowl, whisk together the yoghurt, egg yolks and melted butter.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- In a separate bowl, beat the egg whites until stiff peaks form.
- Gently fold the egg whites into the batter.
- Heat a nonstick skillet over medium heat.
- Add a small amount of vegetable oil to the skillet.
- Dollop spoonfuls of batter onto the skillet, making mini pancakes about 2 inches in diameter.
- Cook until the bottoms are golden brown and the tops are bubbly, about 2-3 minutes.
- Flip the blinis and cook until the other side is golden brown, about 1-2 minutes more.
- Repeat with the remaining batter, adding more oil to the skillet as needed.
- Serve with a dollop of yoghurt on top.
