Mini Burritos Recipe
Ingredients:
- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup salsa
- 1 cup cooked rice
- 1 can black beans, drained and rinsed
- 1/2 cup shredded cheddar cheese
- 10-12 small flour tortillas
Instructions:
- In a large skillet, cook the ground beef over medium heat until browned.
- Add the onion and garlic and cook until the onion is softened, about 5 minutes.
- Add the cumin, salt, and black pepper and stir to combine.
- Add the salsa, cooked rice, and black beans and stir to combine.
- Remove the skillet from heat and stir in the shredded cheese.
- Preheat the oven to 375°F.
- Assemble the burritos by spooning the filling into the flour tortillas and rolling them up.
- Place the burritos seam-side down on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes, or until heated through and the tortillas are crisp.
- Remove from the oven and let cool for a few minutes before serving.

Serve the mini burritos as an appetizer for your Mexican-themed party or as a snack for game-day. You can also offer your guests a variety of toppings like guacamole, sour cream, and chopped cilantro to really take these burritos to the next level. Enjoy!
