Mini burritos for the Mexican aperitif


Mini Burritos Recipe

Ingredients:

  • 1 pound ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup salsa
  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1/2 cup shredded cheddar cheese
  • 10-12 small flour tortillas

Instructions:

  1. In a large skillet, cook the ground beef over medium heat until browned.
  2. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
  3. Add the cumin, salt, and black pepper and stir to combine.
  4. Add the salsa, cooked rice, and black beans and stir to combine.
  5. Remove the skillet from heat and stir in the shredded cheese.
  6. Preheat the oven to 375°F.
  7. Assemble the burritos by spooning the filling into the flour tortillas and rolling them up.
  8. Place the burritos seam-side down on a baking sheet lined with parchment paper.
  9. Bake for 15-20 minutes, or until heated through and the tortillas are crisp.
  10. Remove from the oven and let cool for a few minutes before serving.

Serving Suggestions:

Serve the mini burritos as an appetizer for your Mexican-themed party or as a snack for game-day. You can also offer your guests a variety of toppings like guacamole, sour cream, and chopped cilantro to really take these burritos to the next level. Enjoy!
