Mini Puff Pastry Pies: Christmas Cocktail Recipe

Makes: 24 mini pies

Ingredients:

  • 1 package of puff pastry, thawed
  • 300g cooked turkey, shredded
  • 1 cup leftover stuffing
  • 1/2 cup cranberry sauce
  • 1 egg, beaten
  • salt and pepper, to taste

Instructions:

  1. Preheat oven to 200°C.
  2. Unroll the puff pastry and cut out 24 circles using a 3-inch cookie cutter. You can reroll any remaining dough to get more circles.
  3. Place each pastry circle onto a non-stick baking tray and prick all over with a fork. Brush with beaten egg and sprinkle with salt and pepper.
  4. In a bowl, combine shredded turkey, leftover stuffing and cranberry sauce. Mix well.
  5. Spoon the mixture onto the centre of each pastry circle, leaving a small border around the edges.
  6. Bake for 15-20 minutes until the pastry is golden brown and puffed up.
  7. Serve hot, garnished with cranberry sauce and fresh herbs.
