Mini Puff Pastry Pies: Christmas Cocktail Recipe
Makes: 24 mini pies
Ingredients:
- 1 package of puff pastry, thawed
- 300g cooked turkey, shredded
- 1 cup leftover stuffing
- 1/2 cup cranberry sauce
- 1 egg, beaten
- salt and pepper, to taste
Instructions:
- Preheat oven to 200°C.
- Unroll the puff pastry and cut out 24 circles using a 3-inch cookie cutter. You can reroll any remaining dough to get more circles.
- Place each pastry circle onto a non-stick baking tray and prick all over with a fork. Brush with beaten egg and sprinkle with salt and pepper.
- In a bowl, combine shredded turkey, leftover stuffing and cranberry sauce. Mix well.
- Spoon the mixture onto the centre of each pastry circle, leaving a small border around the edges.
- Bake for 15-20 minutes until the pastry is golden brown and puffed up.
- Serve hot, garnished with cranberry sauce and fresh herbs.
