Mini Tarts Tatin with Camembert Recipe

Ingredients:

  • 1 1/2 cup all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup sugar
  • 1 egg yolk
  • 2 tbsp ice water
  • 2 tbsp olive oil
  • 1 onion, thinly sliced
  • 1/4 cup balsamic vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup camembert cheese, cubed

Instructions:

  1. In a bowl, mix together flour and sugar. Add butter and mix until it resembles coarse crumbs.
  2. In a separate bowl, mix egg yolk and ice water. Add to the flour mixture and mix until the dough comes together.
  3. Wrap the dough in plastic wrap and chill it in the refrigerator for 30 minutes.
  4. Preheat the oven to 375°F (190°C).
  5. Roll out the dough on a floured surface until it is 1/8″ thick.
  6. Cut the dough into circles that will fit into the muffin tin.
  7. Grease the muffin tin and line it with the dough circles.
  8. Heat olive oil in a pan over medium heat. Add onions and cook until they are caramelized, approximately 10-15 minutes.
  9. Add balsamic vinegar, salt, and pepper to the onions and cook for another 5 minutes.
  10. Divide the onion mixture into the muffin tin cups.
  11. Top each muffin cup with camembert cheese cubes.
  12. Bake the mini tarts for 20-25 minutes or until the edges of the dough are golden brown.
  13. Remove from oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
