Moorish-Regal Recipe

Ingredients:

  • 500g lamb meat, cubed
  • 2 cups couscous
  • 2 onions, finely chopped
  • 2 garlic cloves, minced
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1/2 tsp paprika
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger powder
  • 1/4 tsp cayenne pepper
  • 1/2 cup raisins
  • 1/2 cup apricots, chopped
  • 1/4 cup almonds, toasted and chopped
  • 2 cups chicken broth
  • 2 tbsp olive oil
  • Salt, to taste

Instructions:

  1. In a bowl, combine the cumin, coriander, paprika, cinnamon, ginger and cayenne pepper. Mix well and set aside.
  2. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Then, add the lamb meat and brown on all sides for about 5 minutes. Remove the meat from the pot and set aside.
  3. Add the onions and garlic to the pot and cook until the onions are soft and translucent, for about 5 minutes.
  4. Add the spice mixture to the pot and stir well, then add the raisins and apricots. Cook for another 2 minutes.
  5. Add the lamb meat back to the pot and stir until combined with the spices and fruits. Pour in the chicken broth and bring the mixture to a boil.
  6. Reduce the heat to low and let the stew simmer for about 1 1/2 hours, or until the lamb is tender.
  7. While the stew is cooking, prepare the couscous according to the package instructions.
  8. Once the stew is done, remove from heat and let it rest for 5 minutes.
  9. Fluff the couscous with a fork and transfer to a serving dish. Top with the lamb stew and sprinkle with toasted almonds.
  10. Serve and enjoy!
