Moorish-Regal Recipe
Ingredients:
- 500g lamb meat, cubed
- 2 cups couscous
- 2 onions, finely chopped
- 2 garlic cloves, minced
- 1/2 tsp cumin powder
- 1/2 tsp coriander powder
- 1/2 tsp paprika
- 1/2 tsp cinnamon
- 1/2 tsp ginger powder
- 1/4 tsp cayenne pepper
- 1/2 cup raisins
- 1/2 cup apricots, chopped
- 1/4 cup almonds, toasted and chopped
- 2 cups chicken broth
- 2 tbsp olive oil
- Salt, to taste
Instructions:
- In a bowl, combine the cumin, coriander, paprika, cinnamon, ginger and cayenne pepper. Mix well and set aside.
- Heat the olive oil in a large pot or Dutch oven over medium-high heat. Then, add the lamb meat and brown on all sides for about 5 minutes. Remove the meat from the pot and set aside.
- Add the onions and garlic to the pot and cook until the onions are soft and translucent, for about 5 minutes.
- Add the spice mixture to the pot and stir well, then add the raisins and apricots. Cook for another 2 minutes.
- Add the lamb meat back to the pot and stir until combined with the spices and fruits. Pour in the chicken broth and bring the mixture to a boil.
- Reduce the heat to low and let the stew simmer for about 1 1/2 hours, or until the lamb is tender.
- While the stew is cooking, prepare the couscous according to the package instructions.
- Once the stew is done, remove from heat and let it rest for 5 minutes.
- Fluff the couscous with a fork and transfer to a serving dish. Top with the lamb stew and sprinkle with toasted almonds.
