Mushroom Cake

Ingredients

  • 200g mushrooms, chopped
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1/4 cup olive oil
  • 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 eggs, lightly beaten
  • 1/2 cup grated parmesan cheese
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat your oven to 350°F and grease a 9-inch round cake pan.
  2. In a large pan, heat the olive oil over medium-high heat. Add the chopped mushrooms and onion and cook for 5-7 minutes or until tender and most of the moisture has evaporated. Stir in minced garlic and cook for another 1-2 minutes.
  3. Remove from heat and set aside to cool.
  4. In a separate bowl, whisk together the flour, baking powder, salt, and black pepper.
  5. In another bowl, beat the eggs and then stir in the grated parmesan cheese and chopped parsley.
  6. Add the dry ingredients to the egg mixture and mix until well combined.

  8. Pour the mixture into the prepared pan and bake for 25-30 minutes or until a toothpick inserted into the center of the cake comes out clean.
  9. Remove from the oven and allow the cake to cool slightly before removing it from the pan. Serve warm or at room temperature.
