Nice Pasta Salad Recipe
Ingredients:
- 1 lb pasta
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 green bell pepper, chopped
- 1 red onion, chopped
- 1 cucumber, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 1/2 cup feta cheese, crumbled
- 1/3 cup olive oil
- 1/4 cup red wine vinegar
- 1 tablespoon Dijon mustard
- 1 garlic clove, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
- Cook pasta according to package directions. Drain and set aside to cool.
- In a large bowl, combine chopped bell peppers, onion, cucumber, cherry tomatoes and black olives.
- In a separate bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, dried oregano, salt and pepper.
- Add cooled pasta and crumbled feta cheese to the vegetables.
- Pour dressing over pasta and vegetables and toss to coat.
- Chill salad for at least 30 minutes before serving.
