Nice Pasta Salad Recipe

Ingredients:

  • 1 lb pasta
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 red onion, chopped
  • 1 cucumber, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/3 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 garlic clove, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

  1. Cook pasta according to package directions. Drain and set aside to cool.
  2. In a large bowl, combine chopped bell peppers, onion, cucumber, cherry tomatoes and black olives.
  3. In a separate bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, dried oregano, salt and pepper.
  4. Add cooled pasta and crumbled feta cheese to the vegetables.
  5. Pour dressing over pasta and vegetables and toss to coat.
  6. Chill salad for at least 30 minutes before serving.
