  • 1/2 cup milk
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions:

  3. In a large saucepan, combine the potatoes, garlic, and enough cold water to cover the potatoes by about an inch. Bring to a boil over medium-high heat, then reduce the heat and simmer until the potatoes are very tender, about 20-25 minutes. Drain the potatoes and garlic well.
  4. While the potatoes are cooking, poach the salt cod in a large pot of simmering water for about 10-15 minutes, until the cod is fully cooked and tender. Drain the cod and remove any skin and bones.
  5. In a large mixing bowl, combine the warm potatoes and garlic with the olive oil, milk, cream, Parmesan cheese, and salt and pepper to taste. Mash all the ingredients together until you have a thick, creamy texture.
  6. Shred the cooked salt cod into small pieces and stir it into the potato mixture until it is well combined. Adjust the seasoning as needed.
  7. Serve the brandade warm with crusty bread and a green salad on the side.
