No-Bake Chocolate Cookie Yule Log

Ingredients:

  • 1 package of chocolate sandwich cookies
  • 1 package of cream cheese
  • 1/2 cup of powdered sugar
  • 1/4 cup of cocoa powder
  • 1 tsp of vanilla extract
  • 1/2 cup of unsalted butter, softened
  • 1/2 cup of heavy cream
  • 1/2 cup of chocolate chips
  • 1 cup of powdered sugar, for dusting

Instructions:

  1. Take the cookies and crush them into very fine crumbs. A food processor can be used for this.
  2. In a mixing bowl, mix the cream cheese and butter until smooth.
  3. Add the powdered sugar, cocoa powder, and vanilla extract to the bowl and mix well with a hand mixer.
  4. Slowly add the cookie crumbs into the mixing bowl and combine everything together until it becomes a very thick dough.
  5. On a large sheet of wax paper, place the dough and mold it into a log shape with your hands. Make sure it is compacted and there are no gaps.
  6. Put the log into the refrigerator for at least 30 minutes.
  7. While the log is chilling, make the frosting by melting the chocolate chips with heavy cream in a small pot over low heat. Stir constantly until the mixture becomes smooth. Set it aside to cool.
  8. Take the log out of the refrigerator and frost it over using a spatula. Pour and spread it evenly over the surface.
  9. Pipe a bit of frosting at the two ends of the log so that it looks more like a log.
  10. Sprinkle powdered sugar on top and garnish with decorative edible leaves or a small ‘mushroom’ made with a cut marshmallow and small chocolate chips.
  11. Refrigerate again for at least 2 hours before you serve.
