Old Fashioned Blackberry Jelly
Ingredients:
- 4 cups blackberries
- 4 cups granulated sugar
- 1 packet powdered pectin
- 1/4 cup lemon juice
Instructions:
- Thoroughly wash and sterilize eight 8-ounce jars and lids.
- In a large saucepan, crush the blackberries using a potato masher.
- Add the powdered pectin and lemon juice to the saucepan and stir to combine.
- Over medium-high heat, bring the mixture to a rolling boil, stirring constantly.
- Add the sugar to the saucepan and stir until the sugar is completely dissolved.
- Return the mixture to a rolling boil and let it boil for 1-2 minutes, stirring constantly.
- Remove the saucepan from the heat and skim off any foam that has formed on the surface.
- Carefully pour the hot jelly mixture into the sterilized jars, leaving about 1/4 inch of headspace.
- Wipe the rims of the jars clean and place the lids on top.
- Process the jars in a boiling water bath for 10 minutes, or for the amount of time recommended by your canning equipment manufacturer.
- Remove the jars from the water bath and place them on a towel to cool.
- Check the seals on the jars after they have cooled completely to ensure they are properly sealed.
