Old Fashioned Blackberry Jelly

Ingredients:

  • 4 cups blackberries
  • 4 cups granulated sugar
  • 1 packet powdered pectin
  • 1/4 cup lemon juice

Instructions:

  1. Thoroughly wash and sterilize eight 8-ounce jars and lids.
  2. In a large saucepan, crush the blackberries using a potato masher.
  3. Add the powdered pectin and lemon juice to the saucepan and stir to combine.
  4. Over medium-high heat, bring the mixture to a rolling boil, stirring constantly.
  5. Add the sugar to the saucepan and stir until the sugar is completely dissolved.
  6. Return the mixture to a rolling boil and let it boil for 1-2 minutes, stirring constantly.
  7. Remove the saucepan from the heat and skim off any foam that has formed on the surface.
  8. Carefully pour the hot jelly mixture into the sterilized jars, leaving about 1/4 inch of headspace.
  9. Wipe the rims of the jars clean and place the lids on top.
  10. Process the jars in a boiling water bath for 10 minutes, or for the amount of time recommended by your canning equipment manufacturer.
  11. Remove the jars from the water bath and place them on a towel to cool.
  12. Check the seals on the jars after they have cooled completely to ensure they are properly sealed.
