Paella Recipe
Ingredients:
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, sliced
- 2 cups of Arborio rice
- 4 cups chicken broth
- 1/2 teaspoon saffron
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 pound shrimp, peeled and deveined
- 1/2 pound mussels, scrubbed and debearded

Instructions:
- Heat the olive oil in a large paella pan or skillet.
- Add chopped onion, garlic and red bell pepper. Sauté for 5 minutes.
- Add Arborio rice and stir for 2 minutes.
- Pour in chicken broth, saffron, smoked paprika, salt and black pepper.
- Bring to a boil and then reduce heat to medium-low. Simmer for about 15 minutes or until most of the liquid is absorbed and the rice is tender.
- Add shrimp, mussels and peas to the pan.
- Cover and simmer for another 5-7 minutes.
- Once the shrimp is pink and the mussels have opened, remove from heat.
- Serve hot with lemon wedges on the side (optional).
