Pannacotta with Peaches in Syrup Recipe

Ingredients:

  • 2 cups heavy cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons gelatin powder
  • 1/4 cup cold water
  • 1 can of sliced peaches, drained (or 2 fresh peaches, pitted and sliced)
  • 1/2 cup water
  • 1/4 cup granulated sugar
  • 1 cinnamon stick

Instructions:

  1. In a medium saucepan, combine heavy cream, sugar, and vanilla extract over low heat. Cook, stirring constantly, until the sugar has dissolved.
  2. In a small bowl, mix gelatin powder and cold water together. Add this mixture to the warm cream mixture. Stir until gelatin has dissolved.
  3. Remove from heat and let mixture cool for 10 minutes.
  4. Pour mixture into serving glasses or ramekins. Refrigerate for at least 2 hours or until set.
  5. In a small saucepan, combine sliced peaches, water, granulated sugar, and cinnamon stick over medium heat. Cook for 10-15 minutes or until peaches are tender and syrupy.
  6. Let peaches cool slightly and then spoon over the top of the pannacotta.
