Parma Crust Mini Quiches Recipe

Ingredients

  • 200g Parma ham
  • 50g unsalted butter
  • 1 onion, chopped
  • 5 eggs
  • 100ml double cream
  • 1 tsp dried thyme
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 180°C/356°F.
  2. Grease a 12-hole muffin tin with butter or cooking spray.
  3. Lay a slice of Parma ham into each muffin hole, pressing down firmly.
  4. Melt the butter in a frying pan over medium heat. Add the onion and cook until softened but not browned.
  5. In a mixing bowl, whisk together the eggs, double cream, thyme, and salt and pepper to taste.
  6. Add the cooked onion to the egg mixture and stir well.
  7. Pour the egg mixture into the Parma ham crusts, filling each about 3/4 full.
  8. Bake in the preheated oven for 15-20 minutes, or until the egg mixture is set and the crusts are golden brown.
  9. Remove from the oven and allow to cool for a few minutes in the tin before transferring to a wire rack to cool completely.
